London’s legendary St. John is coming to Wayfinder’s striking brand-new winery, farm and restaurant for an exclusive collaborative dinner.
From the Earth
This dinner brings together St. John co-owner and renowned wine connoisseur Trevor Gulliver, who also commands his own winery in France (Boulevard Napoléon), alongside Wayfinder's Executive Chef Brendan Pratt, Winemaker Andrew Trio and Market Gardener Amy Dyson.
Stepping into the venue's incredible rammed-earth aesthetic, guests will experience an evening of low-intervention craft. The centrepiece of the evening is a multi-course menu that beautifully intertwines the rich and high-quality textures of world-class West Australian produce with St. John's pioneering nose-to-tail philosophy.
Driven by a shared ethos of regenerative agriculture, Wayfinder’s wine experts have masterfully paired these courses with Wayfinder’s progressive, soil-first viticulture, ensuring a seamless, world-class dialogue between glass and plate.
Expect a sophisticated but deeply grounded dining experience where every dish is a direct reflection of the season, the source, and a shared passion for the land.

Pair'd Bus transport is available for this event as a ticket add-on. Guests wishing to utilise the service must book by 5 November 2026.
