Evan Hayter is the Executive Chef and co-owner of de’sendent, a refined dining restaurant on the main street of Margaret River. With 25 years of kitchen experience, including a decade leading the beloved Arimia Estate, which was a finalist in the 2023 Gourmet Traveller Best Destination Restaurant list, Evan brings a wealth of expertise to his new venture.

Evan’s culinary journey began at popular Perth venues like the Subiaco Hotel and Dear Friends in the Swan Valley. He then honed his craft in Europe, working at a Michelin-starred restaurant in Den Haag, Netherlands. Bringing his global experience back to Western Australia, Evan’s love for Margaret River led him to put down roots in a region he believes yields the world’s best produce.

His hands-on approach to sourcing and growing high-quality organic ingredients has fostered strong relationships with local producers. This commitment to sustainability and a deep understanding of produce continue to shape his cooking style. At de’sendent, Evan dishes up thoughtful, seasonal cuisine in a sophisticated space that has elevated the town’s night-time dining scene since its opening in early 2024. “It’s what the region deserves,” he says.
