Morgan Mcglone
Morgan McGlone is the co-founder and owner of Goodies Hospitality, the Sydney-based restaurant and hospitality group he runs with one of his closest friends, chef Nathan Sasi. Together, they own and operate some of the city’s most loved and acclaimed restaurants, including Bar Copains, Bessie’s & Alma’s, and VIN-Cenzo’s.
A third-generation New Zealand-born chef, Morgan is first and foremost a food nerd. His favourite book as a child was a cookbook, and he would spend hours making dishes from it for his family, with his dad offering encouragement from the sidelines.
He began his culinary career in Sydney before moving to the United States, where he launched his own catering and chef agency before spending several years working with Sean Brock at Husk in South Carolina, before becoming Chef de Cuisine at Husk Nashville. It was in Nashville that Morgan fell in love with hot chicken and the culture around it.
In 2014, he returned to Australia to open Belles Hot Chicken. Belles quickly became one of the country’s most-loved restaurants, growing into several locations across Melbourne and Sydney.
Over the years, Morgan has cooked around the world with chefs including Matty Matheson, René Redzepi, Alex Atala, Magnus Nilsson, Rosio Sanchez, Richard Hart, Rodney Scott, James Henry, Clayton Wells, Ed Wilson and Andy Hearnden. Across everything he does, his food is generous, deeply knowledgeable and built around the simple pleasure of feeding people well.
