Raised between the Pyrenees and the Atlantic in France’s Basque Country, Nicolas Eyquem discovered early that wine was more than a drink — it was a shared story. After studying viticulture and business near Bordeaux, he began his journey under mentor Vincent Damestoy, later working harvests and exploring winemaking firsthand.
From a sommelier internship at Michelin-starred Restaurant Le Pastis in Montpellier to leading wine programs at Caesars Palace Dubai, Nicolas developed a global perspective on hospitality, guided by mentors who encouraged bold thinking and humility.
Now Executive Head Sommelier at Black Sheep Restaurants, Nicolas oversees one of Asia’s most dynamic wine programs, including Ho Lee Fook, Michelin-starred Belon, and Jean-Pierre. Whether hosting blind tastings or pairing rare vintages, he brings stories to the glass and people together.
