Yoshinobu Kimura
Yoshinobu Kimura is one of Japan's leading pairing specialists, internationally recognized for redefining the relationship between Japanese sake and contemporary gastronomy.
After graduating from Johnson & Wales University in the United States, Kimura began his career in New York before serving for ten years as Head Sommelier at NARISAWA, one of Asia's most celebrated restaurants. During his tenure, NARISAWA was continuously selected for The World's 50 Best Restaurants (2009–2025) and ranked No. 8 in the world and Best Restaurant in Asia in 2016.
Today, Kimura is the founder of Sushi m and Mukyo Sake & Beyond in Tokyo, where he creates immersive dining experiences through Japanese sake, wine, cocktails, non-alcoholic pairings, temperature, aroma, and food pairing. His philosophy extends beyond beverage service, he designs complete gastronomic experiences that deepen the dialogue between cuisine and drink.
Rather than viewing sake as a traditional beverage alone, Kimura explores its potential as a modern gastronomic ingredient, developing original sake cocktails, temperature driven pairings, and beverage programs that challenge conventional boundaries while remaining deeply rooted in Japanese culture.
His work has brought him to leading restaurants, culinary institutions, and international festivals across Asia, Europe, North America, and Australia, collaborating with some of the world's most respected chefs.
