In this role, Brian expertly crafts enticing seasonal menus, executes Hearth’s vision, and leads a talented culinary team, all while maintaining stringent quality standards and culinary excellence.
Brian’s passion for delivering exceptional guest experiences is evident in his innovative use of nature and open fire, paired with local Western Australian produce and exclusive local wines. At Hearth, Chef Brian re-launched the daily Afternoon Tea in Hearth Lounge and introduced several seasonal dinner and afternoon tea menus, showcasing his evolving creativity and culinary expertise.
With a deep commitment to nurturing and developing his team, Brian has played a crucial role in accelerating the growth and success of his colleagues. His dedication extends to providing outstanding food and beverage experiences while also maximizing the hotel’s financial performance.
