With a diverse culinary background and a passion for smoked dishes, Hayden's journey has taken him from the stunning landscapes of WA to the picturesque countryside of France and the wood grills of Portugal. His high-end apprenticeship and intimate degustation experiences in France have honed his culinary edge, while his time in Portugal has fueled his creativity with open-fire cooking.
Hayden's influences span the globe, with a particular love for Japanese and Southeast Asian cuisines' delicate balance of flavors and South American cuisine's bold, hot, sour, crispy, and spicy combinations.
