Donovan MacDonald, better known as Big Don, is the founder and pitmaster behind Big Don’s Smoked Meats — one of Western Australia’s most awarded restaurants, recently named Casual Restaurant of the Year and recognised with a coveted Chef’s Hat.
What began as a backyard brisket experiment in 2015 has grown into a barbecue powerhouse — the largest BBQ operation outside of Texas by volume. Now running out of a custom-built space in Bayswater, Big Don’s leads a full-time team of 12 chefs to deliver an epic, smoke-fuelled menu… all in just two days a week.
Known for his bold, dry-rubbed brisket, house-made sausages and signature smoky style, Don has built a cult following and a national reputation as one of Australia’s top pitmasters.
