Francis Mallmann, born in 1956, began his culinary journey in 1976, opening his first restaurant with a partner in Argentina. Driven by a passion for excellence, he went on to train in France throughout the late 1970s and early 1980s, working in eight distinguished restaurants, each awarded three Michelin stars. Upon returning to Buenos Aires in 1982, he embarked on various culinary projects across Argentina, Uruguay, Brazil, and Paraguay.

In 1995, Mallmann was awarded Le Grand Prix de l’Art de la Cuisine in Paris, a prestigious honor that marked a turning point in his career. Around this time, he began to shift away from the refined techniques of French haute cuisine and toward the ancestral cooking traditions of the Southern Hemisphere, particularly the elemental power of open-fire cooking.

This profound change in direction became the foundation of his culinary philosophy. Mallmann has since dedicated his work to honoring fire as both a cooking method and a cultural expression. He has authored four acclaimed cookbooks centered on live-fire techniques, and has opened restaurants around the world that reflect his deep connection to the natural elements, simplicity, and authenticity of open-flame cooking.

Today, Chef Mallmann continues his journey, sharing the fragility, beauty, and poetry of fire. Through his cooking and storytelling, he expresses his roots and the enduring romance he holds with fire, a force that is as wild as it is refined.
