Uncertain of his path after finishing school, Sam was introduced to the kitchen by a mentor — a chance encounter that sparked his passion for cooking. With no formal culinary training, he embraced the challenges of professional kitchens and built his career from the ground up — one that has now spanned over a decade.
His early years were spent in Chinese restaurants, including a formative stint in a traditional yum cha kitchen, where he learned the fundamentals of cooking and the discipline required behind the scenes. Over time, he broadened his experience across a range of kitchens, refining his skills and deepening his understanding of diverse cuisines.
Joining Ho Lee Fook as Chef de Partie and now serving as Junior Sous Chef, Sam continues to hone his craft under the mentorship of Executive Chef ArChan, while also guiding and inspiring the next generation of chefs.
