Pair’d Perspectives: Mendy Indigo, DJ & Cook

As Pair’d Margaret River Region draws near, we’re celebrating the artists and creators who bring their passion to every experience.

Mendy Indigo is a standout in Thailand’s techno scene, whose hypnotic beats have electrified stages from Bangkok to Berlin, Ibiza, and Melbourne. Beyond music, she shares her love of Thai cuisine through her playful alter ego, Shit Mendy Cooks, and brings creativity into private, elevated dining experiences. Mendy tells us what draws her to the Margaret River Region, the joy of combining music and food, and what guests can expect from her Pair’d appearance at Night Hawker this November.

HAVE YOU EXPLORED WESTERN AUSTRALIA’S MARGARET RIVER REGION BEFORE?

Not yet! I’ve only been to Melbourne so far, but I have tried Margaret River white wines. I’m very excited to finally explore WA and the region’s incredible mix of food, wine, and nature.

 

WHAT FUELS YOUR LOVE FOR WINE & FOOD?

Cooking has been part of my life for as long as I can remember. In my family, the kitchen is where everyone gathers. We cook together, talk, laugh, and share stories around food.

My love for food deepened once I started travelling. I’d take cooking classes and food tours everywhere I went. It’s the best way to experience a new culture. And I always come home with “culinary souvenirs,” new ingredients, or a dish.

As for wine, my husband opened that door for me. His family is from Bordeaux, and that’s where I first learned about pairing wine and food, and how the right wine can elevate food. It opened up a new world for me.

WHAT’S THE MOST SURPRISING OR UNEXPECTED PAIRING YOU’VE EVER TASTED?

Definitely the French wine and Thai food I served at my own wedding in France! I made Confit de Canard with Massaman sauce, and it paired beautifully with the local red wine. It was such a fun mix of my two worlds coming together.

 

DO YOU HAVE A GO-TO, FOOLPROOF PAIRING THAT NEVER FAILS?

Oysters and white wine. It’s my favorite combination and never fails.

 

LOOKING AHEAD TO NOVEMBER, WHAT CAN GUESTS EXPECT FROM YOUR PAIR’D EVENT, NIGHT HAWKER?

I’m so excited to collaborate with Mal Chow and bring a taste of Thai culinary culture to Pair’d. While Thai food is famous around the world, few people outside Thailand know about our regional dishes and flavours. I can’t wait to see guests discover and enjoy those with us.

 

WHAT’S ON YOUR KITCHEN PLAYLIST?

I usually prefer peace and quiet when I cook, or something soft and calming in the background. Cooking is almost meditative for me.

 

IF YOU COULD TAG ONE CHEF OR WINEMAKER FOR THE 2026 LINE-UP, WHO WOULD IT BE?

I’ve always been a fan of Gordon Ramsay. He’s funny, motivating, and passionate, but also very much a family person, which I find inspiring. I’d love to cook with him one day.

WHY IS IT IMPORTANT TO TRAVEL FOR FESTIVALS LIKE PAIR’D? WHAT DO YOU TAKE HOME, LESSONS, INSPIRATION, OR CONNECTIONS, FROM THESE EXPERIENCES?

Events like this are incredibly inspiring. You learn from others, taste new flavours, see creative ways of presenting food, and meet people who share the same passion. Food lovers are usually my favourite kind of people.

 

DO YOU HAVE ANY EXCITING NEWS TO SHARE?

Yes, I’m working on my first cookbook, which I hope to release in 2026. It’ll feature my favourite recipes and signature dishes. It’s a reflection of my food journey so far.
