Behind the Pair'd | Silvia Colloca

We're delighted to welcome Silvia Colloca, renowned culinary expert and opera singer, to the Pair’d Margaret River Region line-up!

Silvia is known for her expertise in Italian cuisine, having authored bestselling cookbooks and produced and presented various cooking shows. 

In addition to her culinary achievements, Silvia is a trained opera singer, producing her first solo classical album for Universal Music in 2022, which topped the Classical Charts for over 20 weeks. 

As Pair’d draws closer, we’re pleased to present an exclusive interview with Silvia, where she reveals her favourite wine and food pairings and what she is most looking forward to in Margaret River Region! 

Have you been to Western Australia’s Margaret River Region before?

I have never been to Margaret River Region. Don’t ask me how that's possible, but it’s been on my bucket list ever since I arrived in Australia.

What are you most excited to experience in the Margaret River Region?

I am mostly excited about the glorious local produce - the food scene is incredible! Discovering the wine pairings at Pair’d and the incredible landscapes that make this region so lush are also big highlights for me. 

And of course, I am looking forward to meeting lots of wonderful people along the way!

Tell us how you’re involved in Pair’d Margaret River Region this November?

I will be wearing a few hats during the festival. I am curating a beautiful menu for the Grand Tasting, featuring the region’s magnificent local produce. I will also be your resident opera singer, which I am very excited about. I hope to bring a little taste of La Dolce Vita to Margaret River Region!

What is your ultimate pairing of wine, food or music?

My ultimate pairing is a beautiful, al dente bowl of linguine with vongole. Accompanied by a chilled glass of crisp, Pinot Grigio and the notes of the song, ‘I Found My Love In Portofino’. 

And what is something that should never be paired together?

This answer is too easy for an Italian like me: pineapple and pizza!
